How do I keep honey from drying out?It seems like no matter what I do, I just can't keep honey from drying out a few weeks after I buy it. Please help!

I'm going to also guess that your honey is crystallizing, not drying out - it's somewhat inevitable with good honey. I buy honey in glass jars (usually at the farmer's market) because it's easier to warm. If the honey crystallizes I take the lid off and either put it in a bowl of very hot (not boiling) water and stir until the crystals melt, or put it in the microwave and heat for a few seconds at a time until the crystals melt. I think the seal with the glass jar is better than the plastic bottles too, so it seems like I have less crystallization.

Is it getting dry or crystallizing? If it's crystallizing you just need to warm it back up- basically by running whatever container its in under warm water. If it's actually drying out try adding a DROP of water at a time and heating it up, then stirring it. If it's changing so quickly I suspect that you're storing it wrong...

Keep the lid on it, tightly.
Second, to melt those crystals, soak the jar in a pan of warm water...not too hot to crack the glass, not too cool or the cyrstals won't dissolve.
